I found a fish recipe online that gets 5 stars.

RED PEPPER PARMESAN BLUEGILL
Recipe inspired by this:
1 large egg
12 oz. of heavy cream (or evaporated milk)
1 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
1 to 1½ LBS of bluegill fillets (or other mild white fish)
1. in a bowl, scramble egg, add cream and mix well. Add the fish fillets to bowl and submerge them. In a gallon plastic bag, combine the parmesan cheese, Italian seasoning, pepper flakes and pepper.
2. Drain the fish fillets in a colander and add them to the plastic bag with parmesan mixture. Seal the bag completely, but make sure there is some air in the bag. Shake the bag to apply the parmesan mixture. You could also dredge the fillets in the grated cheese mix if you wish.
3. Lay the fillets on a rack coated with cooking spray over a baking sheet. Bake at 425° for 10 minutes. Turn on the broiler and brown the fish another 1 to 2 minutes, or until fish flakes easily with a fork.
